      Title: Smothered Beef Heart
 Categories: Beef
      Yield: 1 Batch
 
    1/2    Beef heart (1/2")
           Salt & pepper; to taste
           Flour
    2/3 c  Beef broth or water
 
  Shake beef heart slices in flour and salt & pepper. Brown until even
  on both sides.
  
  Pour 2/3 cup beef broth or water slowly over meat. Let simmer on low
  heat for 30 minutes or until tender.
  
  Serve with rice or grits.
