Subj : Orzo Stuffed Tomatoes With Yellow Pepper Coulis To : All From : Ben Collver Date : Wed Mar 04 2026 05:33 am MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Orzo Stuffed Tomatoes With Yellow Pepper Coulis Categories: Stuffed, Veg Yield: 4 Servings 1/2 c Orzo 4 lg Ripe tomatoes 1/3 c Pine nuts; toasted 2 cl Garlic; minced 2 tb Fresh parsley; minced 2 tb Fresh basil; minced Salt Black pepper; freshly ground 1 tb Olive oil 1 c Yellow Pepper Coulis Bring a small pot of salted water to a boil over high heat. Cook the orzo, stirring occasionally, until tender, 8 to 10 minutes. Drain and set aside. Preheat the oven to 375?F. Lightly oil a baking dish. Cut a 1/2"-thick slice off the top of each tomato. Scoop out the pulp, leaving a 1/2" thick shell. Set aside. Chop the tomato pulp and place in a large bowl. Add the orzo, pine nuts, garlic, parsley, basil, and salt & pepper to taste, and mix well. Stuff the tomato shells with the mixture. Place them in the prepared dish, drizzle with the olive oil, and bake until hot, about 20 minutes. To serve, spoon a small amount of the coulis onto 4 individual plates or a serving platter and carefully place the tomatoes on top.
