Subj : Tom's Seafood Gumbo To : All From : Ben Collver Date : Fri Feb 27 2026 10:07 am MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Tom's Seafood Gumbo Categories: Soups Yield: 1 Batch 3 tb Shortening 3 tb Flour 1 lb Frozen chopped okra 2 cl Garlic 1 lg Onion; chopped 1/2 Green pepper; chopped 2 lg Gresh tomatoes 1 ts Parsley; chopped 1 ts Pickling spice; - tied in cheesecloth Salt & pepper 3 Shallots; chopped 2 qt Water 1 sl Ham; chopped 1 lb Chicken wings 2 Hot links; - chopped (optional) 1 lb Shrimp 1 tb Gumbo fillet Brown flour in shortening in large heavy iron skillet or Dutch oven. Put in okra and fry until dry. Add onion, garlic, green pepper, and fry lightly. Drop in tomatoes, parsley, pickling spice, and shallots. Cook until grease rises to top. Add water, ham, chicken wings, hot links, and simmer about 1 hour. Shrimp may be added the last 20 minutes. Add fillet just before serving, but do not boil any more. Serve over rice.
