Subj : Down Home Potato Salad To : All From : Ben Collver Date : Thu Feb 26 2026 08:16 am MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Down Home Potato Salad Categories: Potato, Salads Yield: 1 Batch 6 md Potatoes 3 Green onions 2 Eggs; hard boiled 1 tb Pimiento; chopped 1 ts Dry mustard 1 ts Flour 2 ts Sugar Salt & pepper; to taste 1 Egg; beaten 1/4 c Vinegar 1/2 c Evaporated milk Boil potatoes in their jackets until tender, cool slightly, remove skins, and dice coarsely. Slice onions and add to potatoes in a large mixing bowl. Peel & slice hard cooked eggs; add with pimiento to potatoes. Chill while making dressing. Dressing: In a small saucepan, combine mustard, salt, flour, sugar, and pepper. Stir in salad oil, beaten egg, and half of vinegar. Cook and stir over low heat until thickened. Remove from heat. Stir in evaporated milk and remaining half of vinegar. Beat until thickened. Cool slightly, then pour over potato mixture in bowl. Blend thoroughly, but carefully. Chill before serving. Serve in bowl lined with leaf lettuce. Garnish with quarters of hard cooked eggs & parsley. Recipe by Mrs. Thomas J.
