MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Fennel & Celery Salad With Pumpkin Seeds Categories: Salads, Squash, Citrus Yield: 4 Servings 3 Celery ribs; - cut across in paper-thin - slices 1 sm Fennel bulb; - trimmed, - halved vertically, - sliced paper thin 1/2 c Fresh Italian parsley - leaves 1/4 c Pumpkin seeds (pepitas); - toasted, salted 2 tb Olive oil 1 tb Fresh lemon juice 3/4 c Parmesan cheese shavings Use a V-slicer for the vegetables and a peeler for the Parmesan. Combine celery, fennel, parsley, and pumpkin seeds in large bowl. Whisk oil and lemon juice in small bowl. Season with salt and pepper; toss with vegetables.
