MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Fennel, Celery & Pomegranate Salad Categories: Salads, Fruits, Vegetables, Citrus Yield: 3 Servings 3 sm Fennel bulbs; thin sliced 6 Celery ribs; - thin sliced on diagonal 1 md Shallot; - thin sliced in rings 1/2 c Fresh flat-leaf parsley; - very coarse chopped 1/4 c Celery leaves; - very coarse chopped - (optional) 1/2 c Pomegranate seeds; divided 1/4 c Fresh lime juice 1/4 c Olive oil Salt Black pepper; fresh ground Toss fennel, celery, shallot, parsley, celery leaves, if using, and half of pomegranate seeds in a large bowl. Drizzle with lime juice and oil and toss to coat; season with salt & pepper. Serve topped with remaining pomegranate seeds.
