MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Fattoush Categories: Vegetables, Citrus, Herbs Yield: 6 Servings MMMMM--------------------------DRESSING------------------------------- 4 ts Ground sumac; soaked in: 4 ts Water; warm, for 15 minutes 3 tb Fresh lemon juice; or more 2 tb Pomegranate molasses; - or more 2 cl Garlic; minced 2 ts White wine vinegar; or more 1/2 ts Dried mint 3/4 c Extra-virgin olive oil Salt MMMMM---------------------------SALAD-------------------------------- 2 Pita breads (8"); - halved, toasted, - in bite-sized pieces 1/4 c Extra-virgin olive oil Salt 3 md Ripe tomatoes; chopped -OR- 4 c Cherry tomatoes; halved 1 lb Persian cucumbers; - quartered lengthwise, - thin sliced crosswise -OR- 1 lb English hothouse cucumber; - quartered lengthwise, - thin sliced crosswise 6 Scallions; thin sliced 2 Little Gem or baby romaine - lettuces -OR- 1 sm Romaine lettuce head; - trimmed, cut across in - 3/4" strips 2 c Flat-leaf parsley leaves; - loose pack 2 c Purslane leaves -OR- More romaine lettuce strips 1 c Fresh mint leaves Ground sumac (optional) Sumac, a tart, citrusy spice, is available at specialty foods stores and Middle Eastern markets. Pomegranate molasses can be found at some supermarkets and at Middle Eastern markets. Both are sold at kalustyans.com. Dressing: Combine sumac with soaking liquid, 3 tb lemon juice, 2 tb pomegranate molasses, garlic, 2 ts vinegar, and dried mint in a small bowl. Gradually add oil, whisking constantly, until well blended. Season with salt; add more lemon juice, pomegranate molasses, and vinegar to taste, if desired. Salad: Place pita pieces in a medium bowl; pour oil over and toss to coat. Season pita to taste with salt. Mix tomatoes and next 6 ingredients in a large bowl. Add 3/4ths of dressing; toss to coat, adding more dressing by tablespoonfuls as needed. Season with salt. Add pita; toss once. Sprinkle sumac over, if desired.
