MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Peanut Butter Chocolate Chip Oatmeal Cookies Categories: Cookies Yield: 24 Cookies 1 c White whole-wheat flour 1 ts Baking soda 1/4 ts Salt 1/2 c Vegan butter; - room temperature 3/4 c Natural sugar 1/2 c Peanut butter 1/4 c Nondairy milk; - more it needed 1 ts Vanilla extract 1/2 c Semi-sweet chocolate chips 1/2 c Old-fashioned rolled oats 1/4 c Raisins or - dried cranberries - (optional) Preheat the oven to 350°F. Lightly oil two baking sheets, spray them with cooking spray, or line them with parchment paper. Set aside. In a small bowl, combine the flour, baking soda, and salt. In a large bowl, cream together the butter and sugar, then blend in the peanut butter. Add the nondairy milk & vanilla and mix well. Add the dry ingredients to the wet ingredients, then add the chocolate, oats, and raisins (if using), stirring until just mixe. If the dough is too dry, add a little more nondairy milk, 1 tb at a time. Drop the dough by the heaping 1 gb onto the prepared baking sheets, about 2" apart. Press down gently on the top of each cookie to flatten. Bake until golden brown, about 15 minutes.
