MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Zucchini Tahini Bread Categories: Breads Yield: 1 Loaf 3 c All-purpose flour or - white whole-wheat flour 1 ts Baking powder 1 ts Baking soda 1 ts Ground cinnamon 1 ts Ground ginger 1 ts Salt 1 c Natural sugar 1/4 c Tahini 1 c Plain nondairy milk; - unsweetened 2 c Zucchini; - grated, squeezed dry 1 ts Lemon juice 2 tb Sesame seeds Preheat the oven to 350°F. Lightly oil a 5x9" loaf pan and set aside. In a large bowl, combine the flour, baking powder, baking soda, cinnamon, ginger, and salt. In another large bowl, combine the sugar, tahini, and milk until well mixed. Stir in the zucchini, vanilla, and lemon juice. Combine the wet ingredients with the dry ingredients, stirring until just blended. Transfer to the prepared pan and sprinkle evenly with the sesame seeds. Bake on the center oven rack until golden brown and a toothpick inserted in the center comes out clean, about 1 hour and 5 minutes.
