MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Molasses Bread With Walnuts And Raisins Categories: Breads Yield: 1 Loaf 1 1/4 c Plain nondairy milk; - unsweetened 1 1/2 tb White sugar 2 c All-purpose flour 1 c Yellow corn meal; - medium-ground 1 ts Salt 1 ts Baking soda 3/4 c Unsulphured molasses; - not blackstrap 1/2 c Walnuts; coarsely chopped 1/3 c Raisins Preheat the oven to 350°F. Lightly oil a 5x9" loaf pan and set aside. In a small bowl, combine the milk & vinegar and set aside. In a large bowl, combine flour, corn meal, salt, and baking soda, mixing well. Add the molasses and milk & vinegar mixture and stir until the batter is just mixed. Stir in the walnuts and raisins with a few quick strokes, then transfer to the prepared pan. Bake on the center oven rack until firm and a toothpick inserted in the center comes out clean, about 1 hour. Let cool in the pan for 10 minutes before removing from the pan and slicing.
