MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Almond Milk Categories: Beverages Yield: 1 Quart 1 c Raw almonds 4 c Water Versatile almonds can be used to make a nutritious milk alternative with a delicate nutty flavor. Although you can purchase almond milk in natural foods stores, you can make it easily from scratch at home. Soaking the almonds overnight softens them and activates their enzymes, making them more digestible. Soak the almonds in the water overnight. Drain the almonds, reserving the soaking liquid. Place the almonds in a blender with about half of the soaking liquid and blend until smooth. Add the remaining liquid and continue blending until very smooth. Place a fine-mesh strainer over a bowl and strain the almond milk, stirring to push the liquid through. Refrigerate in a covered jar or airtight container and shake before using.
