I used to do charcoal but could not master controlling the temp.
I've been using gas for the last 10 or so uears, love how easy
it is to use but miss the charcol taste.

Hickory and Applewood make the best chips for your charcoal
grill :) Also, dont use the small chips, get the chunks.

Crap. I forgot to mention the END ALL BE ALL MOST IMPORTANT
CHARCOAL accessories:
Hairdryer (for causing the coals to raise temp quickly)
Spray mister (for lowering the temp of the coal) <- I've never
had to use this.
Be sure to get a charcoal grill big enough to have the coals on
one side (the larger Webers are good for this for up to 4-6
people's worth of food). Sear over the high temp coals, then
move over to the no coals side to cook the rest of the way.
Cover to keep the temp more consistent.

Charcoal, but no lighter fluid. (Chimney starter). I also use
lump charcoal, not briquettes.
I agree that controlling the temp is challenging and sometimes I
do wish I had a gas grill... like this weekend when I was
cooking for like 20 people and there was like 5 different kinds
of meat. I burned some hamburgers. :palm:
