Webber gas grill for me. I love the ability to better control
temperature. I use a smoker for things like ribs and such.....
Anything low and slow.
I also recommend the Raichlen books. I have 3 of them and he
has a great book called "Rubs, sauces, and marinades"?? I
believe. It is my bible. My go-to store marinade if I don't
have the time or ingredients on hand is any of the Stubbs brand.
By far the best and not overly salty but full of flavor.
[/quote] Stubbs is good off the shelf. You might try Emeril's
Rub if you can find it. Very good blend.

I do everything on my Char-Broil Professional series. If it's
worth going on the grill, it's worth taking your time and get
the best flavor. I've used both and hands down get a better
result and flavor from the big wood burning, charcoal grill.
There may have been a learning curve on a few things...but I'll
take quality any day. Plus I make my own BBQ sauce and rubs,
trial and error has taught me many things. Happy Fourth guys and
gals, may all of your BBQ be tasty and juicy, may your drinks be
cold and frosty, and if your going to tank this weekend, may
your victories be a plenty and overwhelming.

Also: get Steven Reichlen's (sp?) books. I'm on my phone so
can't really link, and work has blocked this place. :sceptic:
Will post up my rib rub recipe this weekend.

Do you follow him on Facebook? He does a lot of live streams.
Last week he was up your way eating at Joe's and then he headed
down to Wichita to put on a demonstration.

Napalm. Love the smell of it early in the morning.

Jackassery begins! How did I know it would be you Joe.....

LOL actually I prefer Mesquite chips. Had a bud who would soak
them in bourbon for some ungodly reason.

I use my el-cheapo Char-Broil 4 burner gas and replaced my
grates with <A

I have an IR thermometer, and have measured 650 dg+ at the grill
surface using these. I get great sears on my steaks and burgers,
and for other stuff I just use 2 burners instead of 4 to keep
the temp down. I can't recommend these enough, they make your
Home Depot special act like a $1200 infra red grill.
For smoking I have a $300 vertical propane smoker that does a
great job.
