       We stuff ours with homemade stuffing featuring apples, wrap it
       in bacon, and then put in on the grill to smoke for several
       hours.
       HOWEVER ... we did learn a few years ago that it's quite vital
       to keep a drip pan under the bird, and that drip pan should be
       full of liquid (we use apple juice).
       And what happens if you do not keep that pan full and it dries
       out?
       Well ... tuns out that bacon is extraordinarily flammable. On
       the bright side: It cooks it a lot faster. The down side: You
       get ... well, a Zebra Turkey.

       One of the keys when i smoke a whole turkey on the grill is to
       get a pan with some water in it , and set it above the direct
       heat. that way it not only smokes , but stays fairly moist with
       the steam.
       Also i baste it a lot , depending on how hot the grill is
       getting (especially toward the end)with either a good buttery
       sauce or if your good at making vinigrets  , make a crannberyy
       or raspberry vinigret.
       The fruity vinigrete will give your tureky a great mild
       sweetness that is amazing.

       I do the pan with water thing for my ribs and briskets too. I
       never need foil, just have to keep an eye on the temp and water,
       soooo juicy!

       That's what I'm talking about. I used to have a set up just like
       that, I even took an 8 foot ladder and put pulleys on it to
       lower the turkey in. Now I have an electric fryer, works good
       enough, just have to keep the bird 13 lbs or smaller. Great
       looking bird.

       When Josh was eating meat, he's been a vegetarian for 2 years
       now, I used to fix an apricot glazed turkey. I found the recipe
       on food&wine. The turkey was always so moist and full of flavor
       and the gravy.....YUM!  :carving:
