I invented this little appetizer a long time ago, and there is
quite a bit of variation you can do to it, so feel free to mix
       it up!!
       2lbs Boneless Skinless Chicken Breast
KC Masterpeice dry BBQ seasoning (or your fav flavoring)
       KC Masterpeice Liquid BBQ seasoning
       Tostito's Tortilla Chips
       5-7oz your fav shredded cheese.
I prefer to grill my chicken using ONLY the dry BBQ seasoning.
Once cooked, remove from grill and let sit until room
temperature. Once the chicken has reached room temperature,
shred it as best you can. DO NOT use a food processor, as that
will make mush!! Just cut it up and small as you can if you
can't shred it. Place in tupperware container and put in fridge
       until ready to use.
Heat oven to 350. Take a tortilla chip and brush it lightly
with the wet BBQ sauce. Place some of the chicken on the
tortilla (amount is up to you) and top with shredded cheese
(again, amount is up to you) Place chips on an aluminum foil
liked cookie sheet and bake for 5-7 min or until the cheese
melts and looks yummy. Remove from oven and serve!
These are great, FAST little appetizers and you can change it up
drastically by using different seasoning when cooking the
chicken, different sauces on the chips (doesn't HAVE to be BBQ)
and topping the Buffalo Chips with things like salsa, sour
cream, etc. Give it a shot, these are awesome!!
