We don't have "casseroles" often, but the casserole type dishes
we do like are: shepherd's pie, mac & cheese, lasagna, moussaka.
My favorite casserole was the only one, besides the
aforementioned, that my Mom used to make: ground beef cooked
with chopped scallions, stewed tomatoes, chopped black olives
and bottled chili sauce, layered with the macaroni and cheese
from boxed mac & cheese. It was called "Pesky Beef" (that was
the name of the recipe; I think Mom clipped it from a magazine
like 50 years ago!) I stopped making it years ago because DS
while he was growing up didn't like scallions and olives. It's
not difficult but it's labor intensive, and quite good.

I make a Santa Fe casserole with ground turkey that's really
good. I haven't made it in a long time though. I should find
the recipe and make it this week. That's for the reminder.
