       Mine's really basic:
       Ground beef, an egg, a handful of crackers (crushed), a packet
       of onion soup mix, basil, salt and pepper, a good squirt of
       ketchup and a squirt of mustard. Mix them all together, put it
       in a loaf pan or casserole, top with some bbq sauce and either
       sliced cheese halved on the diagonal (so triangles)or shredded
       cheese. Then bake until done at 400 degrees, let sit for 5 mins
       and enjoy with mashed taters.
       Sometimes I'll change it up and make it in muffin tins or cut up
       a couple of cheese sticks and stuff the meatloaf/muffins, or
       I'll substitute salsa for the soup mix and spices (no mustard or
       ketchup then either.

       I rarely make it because I only like it made with ground beef,
       and that is really expensive in our area.  I like other ground
       meats, but I just don't like meatloaf with any meat other than
       beef.
       Anyway, in addition to the beef, I use crushed Lay's potato
       chips, diced onion, ketchup, and one egg per pound of meat (I
       usually do 2 lbs.).  I mix all that together, put it in a loaf
       pan, and cook it in the oven at 350 for about 45 minutes.

       when we make it,
       It's just ground beef,onions,ketchup,mustard,salt,pepper then I
       just put ketchup over the top too
       normally people put eggs and bread crumbs but my hubby don't
       like the texture in the meatloaf but above is my base for it

       There's a meatloaf seasoning packet? I'll have to look for this.
       When I've been in a hurry I've used an onion soup mix packet-
       add some bread crumbs, an egg, a bit of ketchup, and it is ready
       to shape and bake. I've never tried cheese in the middle but
       like the idea.
       When I don't use a mix packet, I chop onion, add salt and
       pepper, torn up bread, ketchup, an egg, bake an hour for a pound
       of meat. Sometimes I put ketchup on the top and sometimes bacon
       slices, then bake.

       I have 2 recipes that DH loves, and the 2nd one was my Dad's
       favorite.
       Turkey Meatloaf:
       1-2 lbs ground lean turkey
       1 cup turkey stuffing mix (I use Pepperidge Farm stuffing), or 1
       cup of breadcrumbs with the usual turkey seasonings added -
       ground dried sage, rosemary, thyme, poultry seasoning.
       1/4 cup chopped parsley
       1 egg, lightly beaten
       salt and black pepper
       1/2 chopped chopped onions
       1/4 c. each chopped carrots and celery.
       1/4 c. vegetable oil, olive oil, or melted butter
       A little hot water or chicken broth.
       Pour the hot water or broth over the stuffing mix/bread crumbs
       and let sit til moistened.
       Saute the onions, carrots, celery, parsley til soft and
       translucent. Add to the stuffing mix, then add the turkey and
       beaten egg.  Mix together thoroughly and form into a loaf in a
       shallow baking dish.  Bake at 375 degrees F til lightly golden
       brown and juices run clear. Serve with turkey gravy - best with
       gravy made with Knorr Roast Turkey Gravy Mix.  Serve with
       Brussels sprouts, and yams or mashed potatoes.
       Dad's Favorite Meatloaf:
       2 lbs ground beef (mixed with a little ground pork - optional
       3/4 c. ground Ritz cracker crumbs (they have to be Ritz or a
       similar cracker).
       1/3 c. finely chopped onions or scallions
       1 small can tomato paste
       1 egg lightly beaten
       About 1 large dried bay leaf, crushed
       About 1 tsp each dried crushed thyme leaves and dried marjoram.
       About 1/2 tsp garlic powder
       Salt and black pepper.
       Ketchup for topping.
       Combine all ingredients with the meat, mix thoroughly, bake in a
       shallow baking dish at 375 oven about 45 minutes til browned on
       top.  Coat top well with ketchup, bake an additional 10-15
       minutes til thoroughly cooked.
       Optional: bake on high power in a baking dish covered with wax
       paper in microwave, about 10-12 minutes.  Drain excess fat, then
       put in 375 oven for 20 minutes, top with ketchup and bake about
       10 minutes more. Cuts down on cooking time and is just as tasty!

       my SO would eat turkey meatloaf . I made it years ago and I like
       it but he is a meat eater .
