Dear 2fat:
How is your bread baking expertise? The reason I am asking is
that I have a dinner roll recipe that I make and I want to know
how that would be as a bread loaf. The rolls are made with whole
wheat, eggs, molasses, mashed potatoes and typical bread
ingredients. I mix it all together and kneed it for 10 minutes
then I refrigerate it over night. I thought perhaps that being
considered a heavy bread that it would not get done properly as
a loaf. Thanks.

Dear 2fat;I have told that it possible to bake bread with beer
but I have been unable to find any recipes nor have I been
unable to buy any bread directly. Any suggestions?

should work fine--just make sure that the dough gets time to
warm after shaping and removing from fridge--should be at least
70deg before baking--finished temp should be around 195-200deg
I bake bread/rolls about 3times a week--tackling bagels this
week for the 1st time

first bread I ever made was this easy beer bread
3 cups self-rising flour
sugar---1 to 4 Tbs
12 ounces beer
melted butter1/2 stick or so-- butter is good
Mix the flour, sugar, 2 tablespoons of the melted butter, and
the beer, stirring until fairly smooth; don't worry about small
lumps--pour into a greased loaf pan and top with the rest of the
butter---bake @375 for about 50min or so--toothpick test should
be pretty clean--cool on rack
otherwise beer can be subbed in most any bread recipe for the
water--

I would like your opinion on rinsing off meat before you cook
it. When I prepare poultry I always rinse it off with water. I
saw on television once that birds are not always rinsed off
properly in the food plant. So I rinse them off a second time at
home, then I disinfect all that I have touched in the process
after the bird goes in the oven. (Brakebush by the way is a very
clean meat plant from what I have been told.)
So when I prepare beef or pork is it necessary to be as careful?

think rinsing poultry is thought by most professionals to be
unnecessary--doing more potential harm then any good--I always
dry poultry but don't rinse--other meats too here is an

How about a spray bottle of white vinegar and a spritz over
before a water rinse? Also spray the area of cleaning before and
after. Anyone ever try that?
