       Canning woes

       Equipment and supplies just aren't available. Jars, lids,
       rings---sold out everywhere.
       Remember the electric pressure canner I mentioned earlier? None
       to be had anywhere, even from the manufacturer.
       Thankfully, we had enough to complete this year's harvest, but
       it was close. These are things we like to keep well-stocked on;
       we usually buy replacements as we use them up, especially lids.
       Jars and rings can be reused, but we go through them too.
       I suspect that the huge demand this year was fueled by recent
       events---lots of people decided they were going to grow and
       preserve food. An excellent decision, but it's also a fair
       amount of work. I predict that a number of them will opt out
       when they discover that it's not so easy. Hopefully they'll be
       selling off their recent purchases at decent discounts in the
       near future. I will be ready to snap them up.

       There’s a bunch of electric pressure cookers on Amazon. They
       call them instant pots now. Is that what you’re talking about?
       I have an old fashioned Mirro stove top 6 quart pressure cooker.
       I don’t use it much anymore. I used to cook all sorts of stuff
       in it. Beans, roasts, chickens.
       Never did the canning thing with it though.

       No, sadly "instant pots" will not do for canning. This is a much
       larger implement.
       We have a huge pressure cooker we use for canning. We also have
       a smaller one we use for cooking.

       You're absolutely right!...but do we have enough lids? MAYBE, if
       we use regular (not wide mouth) jars. About 3lbs of tomatoes per
       quart means we've got six quarts' worth, and there may well be
       more coming. We have about a dozen lids. Can't find any for sale
       anywhere!
       Not sure what variety these are. They're plum shaped, like a big
       Roma or Amish paste. Nice firm meaty heavy fruits, great for
       canning. Great flavor (of course I ate one).
       Cinny works 6:30AM to 3PM today. By the time she comes home,
       I'll have these blanched, peeled and cut up. Have the citric
       acid measured out. The jars, lids and rings ready to sterilize.
       The big canning pot set up and ready to go. After she rests a
       while, we'll fire up the stove and get 'em canned.
       Thankfully it's unseasonably cool lately. Canning heats the
       kitchen up a lot.

       skinned. Refrigerate for an hour or two and cut them into
       quarters. Getting out canning gear.
       Raining steady in SE lower Michigan this morning. Where was this
       a month ago when I needed it?

       24 hour delay. She was just too whooped after work yesterday, so
       we postponed. I offered to do it myself, but she wants to be
       involved. One of the things we enjoy doing together.
       There are usually shots of bourbon involved. Tradition, ya know
       ;)
