Glad it went well for you, and that you've found a new shopping
spot.
There's a small town on the way out to Dinkleville that
specializes in Eastern European (Ukrainian) style
cured/processed meats. It's also a service counter type setup.
It reminds me of when I was a kid, although we didn't stop at
the butcher's too often. We raised and ate our own meat, for the
most part. Papa D was an avid hunter as well, so we ate a lot of
venison and moose meat, too.
Batter fried deer backstrap is pure taste nirvana.
Mmm... deep fried anything....
Mama D used to make breaded, fried, moose meat cutlets. I could
never get enough of those either.
I have never tasted moose. Don't have them in the lower
peninsula.
Elk, now---om nom NOM!
I’ve never had moose either. I have had elk though. Lean and
meaty!

UPDATE
We've been eating this stuff for a while now. I gotta say, I'm
much impressed.
The cheeses are top drawer, and about 30% cheaper than I can get
from the deli case at my local store.
The bratwurst and Italian sausage were good---but honestly, the
above-mentioned local store makes better.
The pork roast and ribs were great. The roast was crock potted
with a beef chuck roast (and potatoes, carrots and onions). The
country ribs were grilled over charcoal. Very good.
Grilled a few of the beef steaks. Wonderful.
The chicken is also very good. Mostly doing that in the new air
fryer. Couple nights ago we marinated some b/s breasts in a
citrus/sesame sauce, then air-fried them. Crisp outside, juicy
inside. Served over long grain brown rice with a side tossed
salad.
WILL shop there again.

Going back tomorrow, 4th trip there. Love this place.
We enjoy making this trip together---but in light of recent
events, they have a policy of one shopper per order, and they
enforce it. So I'll go while Cinny's at work.
This will be my last shopping venture until the holiday madness
is past.

Dat's a fack, Jack.
But I didn't go yesterday. Cinny really wants to go and she has
tomorrow off. We'll go in a few minutes apart and make like we
don't know each other---she'll have some of the list, I'll have
the rest. I hate playing stupid games but "...in this day and
age" and all that bullshit, ya know? It's gonna be busy and
crowded, it always is. I'll bring my rollator so I have a seat
handy.
Visions of awesome rib steaks are dancing through my head---

The place was mobbed.Stood in line outside for about 10 minutes,
about the same inside until we got an employee to help us. He
was great, just like they always are. He had no use for the "one
customer per order" rule and served us together. Was patient
when I had to sit on my rollator, pull my mask up and breathe.
Only one customer was an asshole out of probably 30 allowed
inside at a time. Everybody else was extremely cool, patient and
cooperative. Friendly even.
Deli first. 1lb each of horseradish cheddar, provolone and
Jarlsburg cheeses. 1lb of hard salami sliced thin. A jar of
maple/bourbon dry rub.
Chicken. Another 10lb bag each of leg quarters and b/s breasts.
Pork. 2lb of chorizo, 6 big hot Italian sausages, 4 thick
boneless butterfly chops, 6 nice country ribs,a boneless loin
roast, 2lb of bacon.
BEEF. 2 filet mignon loins (enough for 8 steaks), a BIG chuck
roast, 4 nice NY strips, 2 HUGE porterhouses.
$206.96. Very decent price for what amount we got and its top
quality.
Back to the vacuum sealer---

Should last 6-8 weeks, maybe more.
Something about these leg quarters (10lb=16 quarters)---the
thighs are great, nice and meaty, but several of the drumsticks
are kinda puny. I'll separate them, cook 'em in the crockpot
with their thighs, pull the meat off, put everything else back
in with some water, make soup stock. Strain it. Add carrots,
celery, seasonings. Make a big batch of chicken soup. This will
give us something to test the new electric canner with, since I
have no fresh veggies right now.
I make the noodles separately and add them when we reheat
it---otherwise they turn to mush.
I need more dies for my pasta roller! I love big egg noodles in
my chicken soup. I can cut them with a knife, but a proper tool
will do it better.

Yeah, I like big noodles in chicken soup too. But I’ve never
tried making my own. I buy bags of leg quarters too. I either
grill them like they come, or separate the legs from the thighs
and bake in a cast iron skillet in the oven. Did that last night
as a matter of fact.
I don’t know why the drumsticks on frozen leg quarters seem
skimpy, but they seem to be universally so. ???
😳
