Potato salad

...Everybody has their own recipe. I make it the way my Mom made
it. My late wife called it “Mashed Potato Salad”
6 medium russet potatoes
2 stalks of celery, diced
1 Bell pepper, diced
1/2 a yellow onion, diced
6 small sweet gherkins, diced
Whites of 2 boiled eggs, chopped
6 tablespoons of yellow mustard
3 tablespoons of mayo
2 tablespoons of pickle juice
Salt and pepper to taste
Peel, then quarter the potatoes. Boil with a teaspoon of kosher
salt.
Drain, then mash the potatoes.
Salt and pepper the potatoes.
Then throw everything else in and mix throughly.
Put in refrigerator and allow a couple of hours to cool.
Eat.

I was with you until you mashed the potatoes. I cut mine into
about 1/4" cubes. Still, I'd try it---

1/4” cubes? That’s some pretty fine dicing bro.

Not hard to do if you've got a good sharp knife (I spent big $
on Sabatiers) and don't overcook the taters---

Yeah....I suppose cooking time would be key with the taters
diced that small....Cook too long...And you've got my recipe....
