       So..

       .....I bought a wok.  I’ve been stir frying stuff for years, but
       just in skillets.
       Thought I would try it in a traditional implement. Gonna break
       it in tomorrow night when the lad is home.
       Have some nice gulf shrimp I bought yesterday and some garlic,
       chopped peppers, celery, and carrots. Then throw it over some
       steamed rice.

       Nice! We have a very similar one, doesn't get a lot of use but
       sure is handy for stir-fries. Veggies are so good cooked that
       way. High heat, peanut oil, fast cooking time. Enjoy.

       way. High heat, peanut oil, fast cooking time. Enjoy.

       I generally use a mix of vegetable and sesame oil. Sesame oil is
       pricey as hell, but imparts a nutty flavor I really like in the
       mix.

       pricey as hell, but imparts a nutty flavor I really like in the
       mix.

       I've found that vegetable oil has too low a smoke point to use
       in stir-frying---peanut oil's is much higher.
       Sesame oil is more of a garnish, I use it at the very last few
       minutes of cooking. Tasty indeed! Keep it refrigerated, it can
       go rancid---

       Never considered the smoke point! Good tip. I’ve used olive oil
       as well. It’s been my experience that the cheapest olive oil you
       can get is the best for use in frying. The good stuff seems to
       get bitter quickly. I use the more expensive extra virgin stuff
       for dressings, etc.

       Olive oil is great for low-temp stuff, like sauteing onions and
       garlic. It can't handle high heat. Trust me, get peanut oil!

       I broke the wok in tonight with the stuff I had on hand.
       Chopped up some green onions, some celery, red and green
       peppers, broccoli. Added some whole fresh green beans and about
       a half a small can of green peas. Sautéed the onions and some
       garlic for about a minute, then added the rest of the veggies.
       Added some seasoning salt and soy sauce. Stirred and cooked for
       about 5 minutes, then added the shrimp and went for another 3
       minutes, then in with the steamed rice and a teaspoon of sesame
       oil.
       It was great! Love the wok!
