Christmas Dinner at Casa De La Jim

...Nothing radical. I roasted a turkey breast. Keeping the
turkey company was an old family recipe. A casserole dish. Spray
it with PAM. Then a layer of sliced russet potatoes, salt and
pepper. Then a layer of cheddar cheese. Repeat until the
casserole dish is pert near full. Final layer of cheddar. Fill
pert near to the top with whole milk. Both in the oven at 325
'til the turkey is done. Pull the turkey out, crank the oven to
500 while the breast rests.(I love saying that, and out loud).
Always do, the Wife always says, "They are until you wake
them!". The Lad always cringes. (We BOTH love that.)
The rolls join the party in the oven with the Taters n Cheese.
Fresh green beans a boilin' with fresh green onion, thinly
sliced, and a minced clove of garlic, and the leftover bacon
from breakfast. Little kosher salt and fresh ground pepper.
Stuffing was Stove top, with a bit of sage thrown in.
Had baked a pumpkin pie the day before and made a fresh
strawberry pie.
For appetizers, I'd halved some Jalapenos, de seeded them and
filled them with Garden combination Philly, and some celery
sticks with the same.
It was just the three of us this year. Had a great Christmas.
Everyone was happy with their gifts, Exceedingly happy. We were
all bloated. The Wife went for a nap, and the Lad and I binged
several episodes of "The Expanse" on Amazon Prime.
Life is good.
