Fajitas

Tonight...Here at Casa de Jim.
Bought some nice lean skirt steak. Got it soaking in marinade in
the fridge. Got some bell peppers, a poblano, some onions and
cilantro.
Will fire up the grill in an hour or so. Slice up the veggies,
warm some tortillas up....

While the meat tasted great, it turned out a little tough. I cut
it up against the grain once grilled. They don't specify which
cut of the skirt is in the package. That is, whether it is the
inside or outside skirt. I can't tell them apart by looking at
them. The inside skirt is the tenderest. I think I got outside
skirt. I made sure to carefully trim the silver fat off the
steak before I cut it into separate portions for marinating. 'S
ok though. Got plenty left and Monday or Tuesday I'll chop it up
and simmer it some BBQ sauce for Sloppy joes.
the peppers onions and cilantro were really good. I sauteed them
in garlic butter in a cast iron skillet. I cooked the tortillas
on the grill and they were toasty good. it all made for some
good tacos, all told.
