Rabbit recipes

Well lads, any good tips/recipes for cooking rabbits? Havin
trouble with the meat going really dry, to the point where the
only ones eating rabbits around here are the dogs!!

Bunny burgers have got to be the best way of using rabbits.
Class on the barbecue. Mix the rabbit meat with pork belly fat.
this keeps it moist. Add fried onion and any herbs or spices you
wish. Brilliant. You can get pork belly fat from any decent
butchers. Hugh Fernly Whittingstall did a great version.

Closely followed by boning the rabbit, then wrapping it tightly
with loads of cling film around a core of good black pudding or
haggis and then boiling the little meat parcels till done (30-40
mins)

I did while rabbit roasted with butter and wild garlic leaves a
few months back, stuff the whole rabbit (skinned & gutted obv)
with butter and wild garlic leaves, throw it in the oven for an
hour and a half, very moist and tasty

Guys,
Have to share;
I strip the rabbits, back end, back legs and up to third rib,
cut off all else. The saddle is the best.
Boil 2 hrs to soften meat, with veg/garlic/cider etc, - then
roast.
Recently did a few roast saddles stuffed with chilli cream
cheese.
Serve with salad/spuds/bread, is outstanding.
For your info, rabbit meat contains more protein than any beef,
pork or chicken, and is also more lean than any.
Best of meat.
