Elaborate? The way I cook every meal is "elaborate"! Lol
I don't do exotic. Not a fan of sushi or calamari or stuff like
that.

I dont know about for just two people -- but my xMIL/xFIL got a
surprise anniversary party complete with the pastor of the
church who did vow renewals - and it was at my house, done luau
style in my backyard - chicken teriaki kabobs and sweet rice
for everyone ;) I wanted to have a nervous breakdown when it
was all said and done LMAO

We have peeps for dinner a lot - sometimes DH cooks and I'm his
sous chef - other times I'll do the meal. The last couple of
meals I downloaded recipes from foodnetwork and they were so
delicious and easy. I can share them if you'd like. I like to
concentrate on meals that'll keep especially when DH is
traveling on his way home. Soups, Stews, etc.

My DH does that LOL he will make chicken marsla stuff that for
our Anniversary I am a down home cook so special meal are
homemade soups ect....
