Today we had afternoon tea with cucumber sandwiches. My husband
said: Now I feel like a royal!

Have to share this recipe. I know Tiger won´t like it, since she
does not eat fish, but it is delicious if you do.
When I served it, my husband exclaimed, it smells like the most
exquisite restaurant food.
White fish, cod for instance. Recipe is for four people, so
about 800 g.
Put it in an ovenproof bowl (dish? what do you call such a
thing?)
salt and pepper on fish.
Mix:
2 dl (2 small cups I think) breadcrumbs
2 tblspoons chopped parsly
1/2 teaspoon grated, organic lemon zest.
3 tblspoons olive oil (or any oil you like) - I put a tiny bit
more into the mix.
2 tblspoons of grated parmesan cheese. Also put a little more
into it.
1 finely chopped or grated clove of garlic.
Salt and pepper.
Mix well and put on top of fish. Bake in a pre-heated oven 12-15
minutes, 200 degrees celcius. Or until breadcrum mix is slightly
golden on top.
When serving put dill on top of fish.
Sauce to go with it is a bit tricky, because it is a mix of milk
(or cream) and a Danish smoked cheese (rygeost). Just stir with
salt and pepper added. It is a cold sauce.
You can serve radishes in quarters with it - or whatever you
think will go with the fish and sauce.
I served boiled potatoes and a green salad with the dish.

Abs this sounds great. About half of us eat fish, I might try
this with flounder (and no garlic )

Tonight of course I am doing the traditional dinner my Irish
mother always did, corned beef, cabbage and mashed potatoes,
glazed carrots and her old fresh baked soda bread. My dear son,
confined to the house and finished school, snuck the first slice
of it well before dinner which is still about three hours away
here
