Is it more polite to interrupt or pretend to learn something?

This is a general etiquette question rather than a specific
situation. When you know something already and someone starts
explaining how to do this to you is it more polite to interrupt
them and tell them you are aware of that or should you listen to
them and inform them after that you're aware?

I try to wait for a natural pause and then be like "Oh yeah!
(insert knowledge here)"
For example, someone starts explaining to me "The purple widgets
have green stripes," and if I already know it, I'll try to
interject at a natural pause, "Oh yeah! And yellow spots,
right?" I try not to step on their actual sentences, but I don't
want them to recite their whole lecture and waste their breath
if I already know! Of course, some people never pause in their
lectures, or keep explaining even after I've proven my
knowledge, and these people are proof against this tactic. ::)

I don't think I would interrupt, but I would try to let on that
I know as soon as there is a lull in the conversation or when
they pause to take a breather.
My In'laws did that just a few days ago when my son was in the
hospital. My MIL's sister is a Neonatal nurse and she had been
giving info to MIL. Of course, MIL was telling me that I should
take him to a specialist and everything that her sister had told
her. I had to tell her that A) we are going to a pediatrician
that is a blood specialist and she has explained everything to
us already.
