Cookies With What I Have Around The House!!

We all have times when we need a treat, but the cupboards are
bare!!! Here are a few quick treats with some items you may
have around the house... Don't be afraid to experiment, some of
my best treats come from doing so...
Raw Raisin Oatmeal Cookies - Egg Free, Dairy Free
2 cups oats
1 cup raisins
3/4 cup pitted date
1 tsp ground ginger
1 tsp ground allspice
2 tbsps honey (agave)
cocoa (nibs available at health food shops)
1 Put the dates in the food processer and mix until fine.
2 Add the oats, raisins, ginger, allspice and honey/agave. Blend
until the mixture sticks together.
3 If you’re using coco nibs add them at the end and give one
final mix in the food processor so that the nibs are mixed in
with the rest of the ingredients.
4 Form the mixture into little balls using your hands. Then
lightly press them in between your palms to flatten the cookies.
Put on a plate or in a tub and keep in the fridge.

Banana, Peanut Butter Oat Cookies!!
3 ripe bananas, mashed
1 tablespoon vanilla
1/2-1 cup natural chunky peanut butter (depending on how much
peanut buttery goodness you want)
4 tablespoons maple syrup
2 cups rolled oats
1/2 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon salt (note: if you are using salted peanut butter,
you may not need any salt, do a taste test with the batter)
˝ cup semi-sweet chocolate chips
Directions:
Preheat oven to 350 degrees F
In a large bowl, mix bananas, vanilla, peanut butter and maple
syrup into a creamy consistency (best to do with a hand mixer).
In another bowl, combine oats, flour, baking powder and salt
Add the dry ingredients to the wet ingredients and stir until
they are well combined, the batter should be slightly sticky.
Fold in the chocolate chips. The batter will be somewhat runny,
this is ok.
Place heaping tablespoon-sized balls of the batter onto a
‘greased’ baking sheet (can also place on wax paper) and cook
for 15 minutes.
Makes around 2 dozen cookies

Island Delight Vegan Cookie!!
3 ripe bananas; mashed
1 teaspoon vanilla
1/4 cup coconut oil
2 cups quinoa flakes
1/3 cup cashews, pulsed in a food processor into sand-like
powder. Be sure not to process them too long or they will turn
into cashew butter!
1/3 cup macadamia nuts pulsed in a food processor into a coarse
powder
1/2 cup unsweetened shredded coconut
1 teaspoon cinnamon
1/2 teaspoon ginger powder
1 teaspoon baking powder
1 teaspoon salt
2/3 cup of dried tropical fruit cut into tiny pieces (I used
pineapple, mango, apricot and papaya).
1/2 cup semi-sweet chocolate chips
Preheat oven to 350 degrees F
In a large bowl, mix bananas, vanilla and coconut oil.
In a separate bowl, stir together quinoa flakes, cashew powder,
macadamia nuts, shredded coconut, cinnamon, ginger powder,
baking powder and salt.
Add the dry ingredient to the wet ingredients and stir until
they are completely combined. Then fold in the dried fruit and
chocolate.
Place heaping tablespoon-sized balls onto a large cookie sheet
and bake for 15 minutes.
Makes about 2 dozen cookies

50 calorie Molasses Cookie!!
2 tablespoons of fresh ginger (or 1 ˝ teaspoon ginger powder)
3 tablespoons of black strap molasses
4 tablespoons of brown sugar
4 tablespoons natural applesauce (I used home-made, no sugar
added)
˝ teaspoon of ground cloves
˝ teaspoon nutmeg
˝ teaspoon cinnamon
˝ teaspoon salt
1 1/2 cups whole wheat flour
1 teaspoon baking soda
Icing:
1 1/2 teaspoons soy or almond milk
1/2 cup powdered sugar
1/8 teaspoon vanilla
Directions
Preheat oven to 350 degrees Fahrenheit
Add fresh ginger to a food processor or blender and process
until it is very fine (if using ginger powder, just add with the
rest of the spices). Next, add molasses, brown sugar,
applesauce, ground cloves, nutmeg, cinnamon and salt (and ginger
powder if not using fresh ginger) to the food processor and mix
until well blended.
In a large bowl, combine the flour, baking soda.
Add the wet ingredients to the dry ingredient and stir together
by hand to make a batter (Should be a thick, sticky
consistency).
On a baking sheet, place tablespoon sized drops of batter. With
a ‘greased’ spatula, shape and flatten the drops into 3 inch
diameter by 1/4 inch thick, rounds (there should be enough
batter for 16 total). The batter will be quite sticky, but just
work with it ;-). Bake for 8 minutes. Remove from oven and let
cool completely before adding the icing.
In a small bowl, mix together the icing ingredients. Drizzle the
icing atop each cookie, the icing takes about 10 minutes to
harden. To make the drizzling easier, you can put the icing in a
zip-lock sandwich bag, cut the very tip of one of the corners
off of the bag (making a hole about the size of the tip of a
pen) and squeeze the icing out through the hole.
Note: Don’t skip out on the icing. Since these cookies aren’t
made with much sugar, the icing really helps to bring out the
flavor. When calculating the calories for these cookies, I don’t
include all of the icing. When I drizzle the icing on the
cookie, I tend to make a mess and about 1/2 of it actually ends
up on the cookie sheet rather than the cookies.

1.Preheat oven to 350°F. Line a baking sheet with parchment
paper and set aside.
2.In a medium bowl, cream butter and sugar together until light
and fluffy. Stir in eggs until well combined. In a separate
bowl, combine all dry ingredients, plus raisins, walnuts, and
chocolate chips. Add dry mixture to wet mixture and stir to
combine. Stir in milk.
3.Drop dough in heaping tablespoonfuls, about 1 inch apart, on
the baking sheet. Bake until golden brown and slightly crunchy,
about 15 minutes.

Ingredients
3 cups old-fashioned rolled oats, coarsely ground
1 cup plain flour
˝ cup plus 2 tablespoons cocoa powder
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon coarse salt
1/2 cup (125 g) unsalted butter, softened
˝ cup (125 g) dark chocolate, melted
1 cup granulated sugar
1 cup light-brown sugar
2 large eggs
1 teaspoon pure vanilla extract
1 cup raisins, soaked overnight in dark rum
1 cup chocolate chips
Preheat oven to 170 deg C.
Drain raisins and toss raisins in ˝ cup of the plain flour.
Stir together oats, flour, cocoa powder, baking soda, baking
powder, cinnamon, and salt in a large bowl, set aside.
Cream butter and sugars on medium speed until pale and fluffy.
Mix in eggs, vanilla and melted chocolate. Add oat mixture, mix
until just combined. Stir in chocolate chips and raisins.
Using a 1 and half inch ice cream scoop, drop dough onto baking
sheets lined with parchment paper, spacing 2 inches apart.
Flatten slightly.
Bake until golden and just set, about 16 minutes. Let cool on
sheets on wire racks 5 minutes. Transfer cookies to racks using
a spatula; let cool completely.

Ingredients:
•3 bananas
•2 cups old-fashioned oats
•1/4 cup creamy peanut butter
•1/4 cup unsweetened cocoa powder
•1/3 cup unsweetened applesauce
•1 tsp. vanilla extract
•Dash of cinnamon (optional)
Directions:
Preheat oven to 350°F. Mash bananas in a large bowl, then stir
in remaining ingredients. Let batter stand for approximately 20
minutes, then drop by teaspoonfuls onto ungreased cookie sheet.
Sprinkle with cinnamon if desired. Bake 10-12 minutes.
Freezing Directions:
Cool completely, then place cookies in a freezer bag. Seal,
label, and freeze.

•3 mashed bananas (ripe)
•.5 cup applesauce
•2 cups uncooked quick-cooking oats
•.25 cup milk or almond milk
•.5 cup dried cranberries, dried blueberries or raisins (I used
half cranberry, half blueberry)
•.5 cup walnuts, crushed (optional)
•2 teaspoons vanilla
•1 teaspoon cinnamon
•1 tablespoon sucanat (or brown sugar)
Directions:
Preheat oven to 350 degrees. Mix all ingredients in a bowl and
let sit for at least 5 minutes to allow oats to hydrate. Heap
the dough by tablespoonsful onto a greased cookie sheet and
squish each ball down a bit with your spoon to spread cookies.
Bake for 15-20 minutes and let cool.
Freezing Directions:
Divide cooled cookies among freezer bags and freeze. To serve:
Thaw. Reheat in microwave for 30 seconds.
