       Pineapple Rice Delight!!!

       PINEAPPLE RICE DELIGHT
       1 2/3 cups undrained canned crushed pineapple
       1/2 cup sugar
       1 tablespoon cornstarch
       1/8 teaspoon salt
       1/2 cup heavy (whipping) cream
       1 1/2 cups cooked rice
       Combine undrained pineapple, sugar, cornstarch and salt.
       Cook, stirring constantly, until mixture boils and thickens.
       Cool.
       Whip cream stiff. Fold in pineapple mixture and rice. Chill
       thoroughly.
       Replace sugar with sugar free substitute... omit salt really
       good!!  Also, if you aren't a pineapple fan try applesauce in
       place of pineapple!!
