Various Pie Crusts For Diabetics!!

These are various pie crusts for diabetics but even before I
knew I was I was using most of them....
Oatmeal Pie Crust!!
3/4 cup flour
1/2 cup oats
1/2 tsp salt (I now omit this)
4 tbsp vegetable oil.....(depending on the use of crust I have
changed this to either peanut oil or olive oil)
Mix and pat into pan.... darn this is easy.... bake shell but
prick before hand bake at 400 for 10 minutes or golden brown
cool
Please be aware that not all pie crusts are the best because
one may have a peanut allergy so beware of who is eating it....

Crust & Topping To Replace Graham Crust!!
1 3/4 cup oats
1/2 cup wheat flour
1/2 cup flour
1 tsp baking powder
1 cup brown sugar or substitute
2/3 cup melted butter
1/4 tsp salt (I now omit this)
Mix dry ingredients well then add melted butter makes a crumble
mixture

1 cup flour
1 tsp baking powder
1/4 cup butter
1 egg seperated
1/4 cup 2% milk
Mix... sort of crumbly press into a greased pan great for Pina
Colada Squares or any bar type square

Ingredients
1/2 cup sliced almonds
2 tablespoons sugar
3/4 cup chocolate graham cracker crumbs
Sugar substitute equal to 3 tablespoons sugar
1-1/2 tablespoons melted margarine or butter
1-1/2 teaspoons fat-free egg substitute
Directions
Preheat the oven to 350 degrees F.
Place the almonds and sugar in a food processor and process
until the almonds are finely ground. Add the graham cracker
crumbs and sugar substitute and process to mix well.
Add the margarine or butter and the egg substitute and process,
pulsing for a few seconds at a time, until the mixture is
moistened.
Coat a 9-inch pie pan with nonstick cooking spray and press the
mixture firmly over the bottom and sides of the pan. (Place your
hand inside a small plastic bag as you press to prevent
sticking.)
Bake for about 8 minutes or until lightly browned. Let cool to
room temperature before filling.

I haven't tried this one yet, it sounds good, but I woud
recommend that one make sure there are no peanut allergies when
serving this one...

Whole Wheat Pie CrustMakes 4 pounds
1 lb., 8 oz. soy margarine
3 oz. honey
1 lb., 2 oz. whole wheat pastry flour
1 lb., 4 oz. unbleached white flour
Beat soy margarine until soft. Add honey, whole wheat pastry
flour and unbleached white flour. Add enough water to moisten
flour so that dough can be gathered into a ball. Cover and
refrigerate. Use as needed.
