       Some Treats To Make With Your Child's Help!!!

       Some of these could be made healthier with fat reduced food,
       low-sodium and cutting down on sugar.... but as they are not
       Diabetic Friendly!!!
       Here's a treat no kid will leaf behind. Made with store-bought
       piecrust dough, these leaves are filled with chocolate and
       peanut butter chips -- but try jam and cream cheese, or
       chocolate chips, walnuts, and mini marshmallows, if you prefer.
       RECIPE INGREDIENTS:
       1 egg
       1 teaspoon of water
       Prepared pie crust
       Mini chocolate chips
       Peanut butter chips
       Raw sugar
       Flour for work surface
       1. Heat the oven to 375°. Whisk one egg with a teaspoon of water
       and set it aside.
       2. On a floured surface, roll out a prepared pie crust so it's
       about 1/8-inch thick. Use a large leaf-shaped cookie cutter
       (ours is 4 1/2-inches wide) to make as many dough leaf pairs as
       possible.
       3. For each pocket, spread about 4 teaspoons of mini chocolate
       chips and peanut butter chips on a leaf, leaving a 1/2-inch
       margin at the edge. Brush egg wash onto the edge, place a second
       leaf on top, and press the edges to seal.
       4. Brush the top with egg wash and sprinkle it generously with
       raw sugar. Bake the leaves on a parchment-covered cookie sheet
       until their edges are just beginning to brown, about 12 minutes.
       Let them rest on the sheet a few minutes before moving them to a
       cooling rack.

       The Wampanoag Indians made mishoonash (canoes) by carving out
       the insides of logs. Your kids can model this practice by
       scooping out the insides of zucchini to make vessels for this
       creamed corn. RECIPE INGREDIENTS:
       1 large carrot
       2 red or green peppers
       4 medium-sized zucchini
       1 16-oz. pkg. frozen corn
       3 tbsp. butter
       1/3 to 1/2 cup light cream
       Salt and pepper to taste
       1. Before making the creamed corn, make "seats" for the dugout
       canoes by peeling and slicing a thick carrot into three or four
       1 1/2-inch slabs. Then slice each piece lengthwise into several
       carrot seats. Cut "oars" out of the peppers and place with the
       carrots in a bowl of cold water to keep fresh.
       2. To make the canoes, fill a large stockpot with water and heat
       to boiling. Meanwhile, slice the zucchini in half lengthwise and
       gently scoop out the insides. Plunge the zucchini "canoes" in
       the boiling water and cook for about 3 minutes, or until just
       tender (be careful not to overcook).
       3. To make the filling, cook the frozen corn according to
       package instructions and then drain. In a large frying pan, melt
       the butter and add the cooked corn. Season with salt and pepper
       and then stir in the cream. Cook over medium heat for 4 to 6
       minutes, stirring frequently to keep the mixture from sticking
       to the pan, until heated through. Spoon the corn into the
       zucchini canoes, place one carrot seat at each end of the canoe,
       and place an oar by each seat. Serves 8.

       Popcorn and granola add a healthy crunch to these peanut-buttery
       treats. RECIPE INGREDIENTS:
       1/2 cup honey
       2/3 cup peanut butter
       1 cup granola cereal, with larger chunks broken up
       1 cup roasted and salted peanuts, coarsely chopped
       3 cups plain popped popcorn
       1. Line an 8- or 9-inch square pan with foil. Heat the honey in
       a large saucepan until it boils, about 2 minutes. Add the peanut
       butter and stir until mixture is well blended.
       2. Remove the pan from the stove and stir in the granola, the
       peanuts, and the popcorn until everything is coated.
       3. Press the mixture evenly into the prepared pan. Refrigerate
       the pan until the mixture is cool, about 30 minutes.
       4. Cut the mixture into small squares (we got 25 from our pan).
       The treats will be a bit crumbly, so you may want to serve them
       in paper candy cups.

       Whether mashed with butter or baked into a pie, sweet potatoes
       have long been an American favorite. In fact, Thomas Jefferson
       even requested that biscuits made from the orange tubers be
       served at the initial meeting of the First Continental Congress
       in 1774. Here's a quick recipe you and your kids can use to whip
       up a batch of mouthwatering biscuits for Thanksgiving or any day
       of the year. RECIPE INGREDIENTS:
       1 1/4 cups all-purpose flour
       2 teaspoons sugar
       1 teaspoon baking powder
       1/2 teaspoon salt
       1/4 teaspoon baking soda
       4 tablespoons cold butter, cut into small pieces
       1/2 cup cooked, mashed, and cooled sweet potatoes
       1 to 2 tablespoons cream or milk
       1 tablespoon melted butter
       Brown sugar
       Pecan halves
       1. Heat the oven to 450 degrees. Stir together the flour, sugar,
       baking powder, salt, and baking soda in a large mixing bowl
       until well combined. Using your fingers, work the butter into
       the flour mixture until it resembles a coarse meal (a great job
       for kids).
       2. Stir in the sweet potatoes, then add the cream or milk a
       little at a time until the mixture can be gathered into a soft
       ball.
       3. Place the dough on a floured surface and knead it 10 or so
       times (not too long), then pat it into a 1/2-inch-thick circle.
       Using a floured cookie cutter or drinking glass rim, cut the
       dough into 2-inch rounds and arrange them on an ungreased baking
       sheet.
       4. Brush the tops with the melted butter and sprinkle on brown
       sugar.
       5. Press a pecan half into the top of each biscuit.
       6. Bake 10 minutes or until golden brown. Makes about 9
       biscuits.

       2 Cups Sugar
       1/2 Cup Cornstarch
       11/2 Cups Water
       1/2 teaspoon Cream Of Tartar
       2 Tablespoons Rosewater Or One Of The Following To Taste:
       1/2 teaspoon Rose Food Flavoring
       1/4 Cup Fruit Juice
       1 Tablespoon Vanilla Extract
       1 Tablespoon Orange Extract
       1 Tablespoon Creme de menthe liqueur food coloring (optional)
       1/2 Cup chopped toasted pistachios or almonds (optional)
       confectioner's sugar, granulated sugar, or desiccated coconut
       for dusting
       1 Cup equals 250 meal
       
       Combine sugar, 1 Cup Water, cream of tartar, and flavoring(s) in
       a small saucepan and bring to a boil. In a separate bowl,
       combine cornstrach with remaining water, mix completley, and
       slowly stir into sugar mixture. Boil over medium-low heat for
       20-30 minutes, until the mixture reaches "Firm-ball stage," or
       248 F (120 C) on a candy thermometer. Apply non-stick cooking
       spray to a form (ice cube trays will do nicely, though not
       plastic ones), shallow pie pan, or jelly-roll pan. Pour the hot
       mixture into the pan or form and allow to set. When cool,
       release from form or cut into cubes as applicable and roll each
       piece in powdered sugar, granulated sugar, or coconut. Store at
       room temperature in airtight container.

       1/2 c Butter -- softened  1 ts Vanilla extract
       1 Bag (10 5oz) colored Miniature marshmallows 1 c Coconut flakes
       -- divided
       12 oz Semisweet chocolate chips Multi-colored  1 c Walnuts --
       chopped --
       Instructions for Church Windows
       In a large saucepan, melt the butter and chocolate chips over
       low heat until completely melted. Remove the saucepan from the
       heat and stir in the vanilla and walnuts. Cool the mixture for
       about 15 minutes, until cool but not to the point of hardening.
       Fold in the marshmallows and stir until well coated. Spoon half
       of the mixture lengthwise down the center of a 12-inch piece of
       waxed paper. Roll the log over the coconut, evenly coating the
       outside of the entire log. Wrap the log firmly in the waxed
       paper, folding the ends snugly. Repeat with the other half of
       the marhsmallow mixture and 1/2 cup coconut. Refrigerate until
       firm, at least 2 hours or overnight. Unwrap each log and cut
       into 1/4-inch slices.

       Googalie Squares Ingredients
       · 2 eggs  · 1/2_cup (4 oz.) chopped cherries (chop in half)
       · 1_cup sugar  · 2_cups (16 oz.) miniature marshmallows (about
       20
       · 1 teas. Salt  · 1_cup (8 oz.) sweetened flaked coconut
       · 1/2_cup butter  · 1-1/4_cup graham crushed crackers (about 20)
       
       · 1 teas. Vanilla
       Instructions for Googalie Squares
       Cook eggs, sugar, salt, butter, and vanilla for 20 minutes on to
       of a double boiler.
       Let cool for 20 minutes.
       Mix in the crushed graham crackers, coconut, marshmallows, and
       cherries.
       Pat into a buttered 8x8 pan.
       Refrigerate.
       Serve cold.

       Candy Cane Brittle
       Makes 2 pounds
       1/2 cup light corn syrup
       1 cup sugar
       1 cup crushed candy canes OR 1-1/2 cups nuts of your choice
       1 teaspoon butter or margarine
       1 teaspoon vanilla
       1 teaspoon baking soda
       
       In a round 1-1/2 quart microwave safe dish, combine corn syrup
       and sugar. Stir well until blended. Microwave on high for 4
       minutes. Stir mixture (if using nuts instead of candy canes,
       stir nuts in now). Microwave on high 4-5 minutes or until light
       brown. Stir in butter and vanilla-blend well. Microwave on high
       1-2 minutes. Add baking soda-stir lightly until foamy. Quickly
       pour onto lightly greased baking sheet (you can use Pam or
       shortening). Pour crushed candy canes over brittle while warm
       and press lightly onto surface. Let cool.

       Candy Cane Fudge
       
       1 package vanilla milk chips
       1 can Pillsbury Vanilla Creamy Supreme Icing
       1/2 teaspoon peppermint extract
       4 drops of red food coloring
       2 Tablespoons of peppermint candy canes (chopped)
       
       Put vanilla chips in pan on the stove at medium heat. Continue
       stirring until the chips have melted. Add icing to pan and
       continue stirring. Take off heat and add peppermint extract
       until dissolved. Pour mixture into a pan. Take food coloring and
       add one drop in each corner of pan. Take butter knife and begin
       stirring until the food coloring has been swirled into the
       fudge. Add chopped peppermint pieces to top of fudge. Cover the
       pan with plastic wrap and place in the refrigerator until the
       fudge has harden. Cut into small pieces.
