Gooseberry Recipes!!

Choctaw Gooseberry Pie
2 c Sugar
1 Tbsp. flour
2 c. gooseberries
2 tbsp. butter or margarine
Pie crust for 2 crust pie
Blend sugar and flour in bowl then add the butter and cut into
dry ingredients, then add the gooseberries. Put the top crust on
and seal the edges. Bake about 35 minutes in a 425 degree oven

Gooseberry and Pineapple Conserve
3 lb Gooseberries
1/2 c Water
2 c Shredded fresh pineapple
2 c Seedless raisins
4 c Sugar
2 c Chopped pecans
Wash and remove blossoms and stems from the gooseberries. In a
preserving kettle, boil the gooseberries in the water until they
burst, about 10 to 12 minutes. Add the pineapple and cook for 10
minutes, stirring constantly. Add the raisins and sugar. Simmer
uncovered for about 15 minutes, stirring frequently. Add the
pecans and cook for 5 minutes to heat them through. Ladle into
hot sterilized jars and seal immediately.

Gooseberry Cheese
1 pt Gooseberries, stemmed
5 tb Sugar
1/2 lb Cream cheese, softened
1 c Heavy cream
Cook the berries with 4 tablespoons of the sugar, but without
water, until soft. Pass them through the fine disk of a food
mill, then all this puree to cool.
Beat the crem cheese with the remaining tablespoon of sugar
until smooth. Beat the cheese together with the gooseberry puree
until completely amalgamated, then beat in the heavy cream.

Gooseberry Jam
1 lb Gooseberries
3/4 lb Sugar
Stem gooseberries and wash carefully. Drain. Add sugar. Heat
very slowly in a covered container until juice begins to form.
Uncover and boil until juice sheets from spoon.

Gooseberry Relish
5 c Gooseberries
1 c Brown sugar
1 1/2 c Raisins
1 Onion, peeled and sliced
3 tb Salt
1/4 ts Cayenne pepper
1 ts Mustard
1 ts Ginger
1 ts Turmeric
1 qt Vinegar
Chop gooseberries, raisins, and onion. Add other ingredients.
Heat slowly to boiling. Simmer 3/4 hour. Stir frequently. Rub
through coarse sieve. Reheat.

Gooseberry Pie (fresh berries)
3 c Gooseberries
1/3 ts Cinnamon
4 tb Flour
2/3 c Sugar, to 3/4 cup
Mix together dry ingredients. Mix lightly through berries. Pour
into
8" pie pan. Dot with 1 tablespoon of butter. If fruit is dry,
sprinkle 2 tablespoons water. Cover with top crust. Bake at 425
degrees for 35 to 45 minutes, until crust is brown, and juice
begins
to bubble through slit in crust.

Oregan Gooseberry Chutney
1 cn (16.5 ounces) OregoN Gooseberries
1/2 c Brown sugar
1 tb Plus 2 teaspoons cider vinegar
1/8 ts Salt
Spices:
Ground allspice
Cinnamon
Ground cloves
Combine gooseberries, sugar, vinegar and salt in saucepan.
Simmer for about 40 minutes, stirring occasionally.
During last 10 minutes: 1/4 of 1/4 (don't overdo) of each of the
spices to follow:
May be packed in sterile jars for storage or kept in the
refrigerator.

There are many different types of recipes this is just a small
selection, but thought I would keep one of each type with the
plant so as to make it easy to find, enjoy and happy picking and
baking!!!
Strawberry Gooseberry Jam
2 qt Stemmed gooseberries
2 qt Hulled strawberries
4 qt Sugar
Wash fruits carefully. Drain. Add sugar. Heat slowly to boiling.
Simmer slowly, stirring frequently, until thick.
To Add to This or Any Fruit Recipe instead of sugar or artifical
sweetener I replace them with sugar-free jello.... of whatever
flavour you would like it gives it the thickening agent plus
more flavour and truly a lot of fruits do not need that extra
sugar that is usually needed to can....
