Oatmeal Raisin Cookies!!

250 mL
(1 cup) margarine or butter, softened 5 mL
(1 tsp) baking soda
250 mL
(1 cup) firmly packed brown sugar 5 mL
(1 tsp) ground cinnamon
125 mL
(1/2 cup) granulated sugar 2 mL
(1/2 tsp) salt (optional)
2 eggs 750 mL
(3 cups) QuakerŽ Oats (any variety, uncooked)
5 mL
(1 tsp) vanilla 250 mL
(1 cup) raisins
375 mL
(1 1/2 cups) all purpose flour
Instructions:
Heat oven to 180°C (350°F). Beat together margarine and sugars
until creamy. Add eggs and vanilla; beat well. Add combined
flour, baking soda, cinnamon and salt; mix well. Stir in oats
and raisins; mix well. Drop by rounded tablespoonfuls onto
ungreased cookie sheet. Bake 10 to 12 minutes or until light
golden brown. Cool 1 minute on cookie sheet; remove to wire
rack. Cool completely. Store tightly covered.
Yield: 4 dozen.
Nutrition Information (1 cookie):
Calories 100; Fat 4 g; Sodium 75 mg; Dietary Fibre 1 g
Variations:
-Stir in 250 mL (1 cup) chopped nuts.
-Substitute 250 mL (1 cup) semi-sweet chocolate pieces or candy
coated chocolate pieces for raisins; omit cinnamon.
-Substitute 250 mL (1 cup) diced dried mixed fruit for raisins.
Ice Cream Sandwich Cookies: Spread softened ice cream on bottom
side of one cookie; top with second cookie. Wrap securely;
freeze

Famous Oatmeal Cookies
Makes about 5 dozen
3/4 cup vegetable shortening
1 cup firmly packed brown sugar
1/2 cup granulated sugar
1 Egg
1/4 cup water
1 teaspoon Vanilla
3 cups oats; uncooked
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon baking soda
Preheat oven to 350. Beat together shortening, sugar, egg,
water, and vanilla until creamy. Add combined remaining
ingredients, mix well. Drop by rounded teaspoonfuls onto greased
cookie sheet. Bake at 350 for 12 to 15 minutes. (For variety,
add chopped nuts, raisins, chocolate chips, or coconut.) Makes
about 5 dozen.
