Referees' occupations

Let's play a little game and see if we can identify referees who
have refereed at national level (national league and above) in
all possible trades.
Teaching might be the by far most common vocation for referees,
and police officers, fitness trainers and salespeople are all
but what about some more interesting careers?
Let me start by listing some more or less interesting
occupations and see if we can identify someone belonging to each
category who have held these occupations during or prior to
their refereeing careers.
Doctor
Nurse
Solicitor
Barrister
Judge
HGV driver
Fisherman
Farmer
Butcher
Clergyman
Pilot
University professor
Artist
Investment banker
Fund manager
Politician
