The foul on the keeper for the disallowed goal doesn't seem
controversial in the slightest to me - keeper is jumping
straight up, attacker jumps into the keeper as he is leaving his
feet and before the ball is within playing distance. IMO it's a
foul anywhere on the field, regardless of it being the
goalkeeper.

There has to be one!

Whilst we might all disagree on "anywhere else on the field",
all referees know - instinctively - that some challenges are
allowed or treated differently in different parts of the field.
Whether that's explicitly true in Law isn't so relevant, we all
know that to be true - both as fans, and as officials.
We allow players to push each other around within reason, but we
wouldn't allow a goalkeeper with the ball in his hands to be
pushed over the goal line. It seems obvious, but the debate
suggests it isn't - though much of the discussion (in particular
on TV) is at best uninformed, and worst deliberately
disingenuous.
I'm quite okay with it being given as a foul. That wasn't
challenging for the ball in any reasonable manner.

The last I knew, the laws said that the GK cannot be challenged
within the goal area when he/she is not in possession of the
ball. If that's still the case, the decision to disallow the
goal was correct.

There is certainly no reference in the Laws to challenges in the
goal area. A challenge (according to Law) is either fair or
unfair regardless of whether it is in the goal area, penalty
area or anywhere else on the pitch.

I don't think that's the case now. All I can see in the LOTG is:
12.2 Indirect free kick: A goalkeeper cannot be challenged by an
opponent when in control of the ball with the hand(s).
An indirect free kick is awarded if a player:
* impedes the progress of an opponent without any contact being
made *This would include impeding a GK
* prevents the goalkeeper from releasing the ball from the hands
or kicks or attempts to kick the ball when the goalkeeper is in
the process of releasing it
Impeding the progress of an opponent without contact: Impeding
the progress of an opponent means moving into the opponent’s
path to obstruct, block, slow down or force a change of
direction when the ball is not within playing distance of either
player.
All players have a right to their position on the field of play;
being in the way of an opponent is not the same as moving into
the way of an opponent.

I've been to a District Cup Final this evening
One of the ten districts of my home county.
Lots of physical challenges, very few of which would be allowed
at higher levels BUT none of which raised even an eyebrow from
players or spectators.
An extremely enjoyable, very competitive fixture with NO rolling
about, NO diving and NO waving of imaginary cards BUT lots of
smiles, lots of appreciation of the opponent and lots & lots of
handshakes.
If only we could see this regularly at higher levels
