From the Rising of the Sun

For me, the crucifix is a symbol of being
present at Calvary. By the way, that is why we have them above
the altars, because Mass is a Cosmic event that places us at
Calvary.
Remember this prophecy from the Old Testament: "For from the
rising of the sun even unto the going down of the same my name
shall be great among the Gentiles; and in every place incense
shall be offered unto my name, and a pure offering: for my name
shall be great among the heathen, saith the Lord of hosts"
(Malachi 1:11)
The Mass is Calvary re-presented in time, a cosmic event that
God allows us to be present at, from the rising of the sun, the
Mass is being celebrated somewhere in the world at every moment.
And now hear what the priest says at Mass:
"You are indeed Holy, O Lord, and all you have created rightly
gives you praise, for through your Son our Lord Jesus Christ, by
the power and working of the Holy Spirit, you give life to all
things and make them holy, and you never cease to gather a
people to yourself, so that from the rising of the sun to its
setting a pure sacrifice may be offered to your name. Therefore,
O Lord, we humbly implore you: by the same Spirit graciously
make holy these gifts we have brought to you for consecration,
that they may become the Body and Blood of your Son our Lord
Jesus Christ at whose command we celebrate these mysteries."
The Mass fulfills the prophecy. Think: How can we offer a pure
sacrifice from the rising of the sun even unto the going down of
the same when Christ offered the once for all sacrifice? Simple:
God lets us re-present that same sacrifice throughout time.
Calvary is made present, in time, by God's grace at Mass.
