       Indeed!
We have a cheese factory about 35 min up the road - Puhoi. When
my mate was out, we bought ... well ... too many cheeses!
       Enjoy ;)

       hallaumi? what is that?
or do you mean hellim? the cypriot cheese, which you can fry on
       pan?
we, the turks, fight over many food with greeks, about where
originally it comes from. they claim many of our food, but i
must say hellim is originally cypriot (where the half of the
island is turkish), so credit goes for them.
its one of my favourite chees actually, just yday fried some, my
father in law was visiting a friend in cyprus, and he brought
quite an amount ;D you should eat the original hehehe...

       Sounds good OT.
Have to wonder how far some of these recipes have changed from
the original. Various cultures & generations changing/tweaking
       them as time goes by.

can only speak of turkish cusine, i think its not changed for
generations, that is why it is popular...
contrary to its fame in europe ( fast food doner shops only),
its very rich in different tastes, style.

Ah yeah OT - do understand that in your own country. Should've
been more clear from my side - I was referring to the original
recipe & preparation method (exactly the way you do it), to what
       we've come accustomed to.
