Huh

I didn't even know that there was gonna be a DQ3 HD-2D thing.

Square Enix seem to be been real quite about that. Hopefully,
it'll also contain the exclusive content from the SNES and GBC
versions.

It turns out that Dragon Quest 3 HD-2D was released not so long
ago. It has a few new story mode bosses, and even brings back
the superbosses from the previous remakes. Remakes for the first
two games are also confirmed to be released for the Nintendo
Switch next year.

It would be nice if a future remake of Dragon Quest IX brings
Styrmling

to the game, among
other things.
With that said, I've seen rumours about Styrmling having been in
DQIX all along, in the form of Sterling. That's a theory I like.

I could see that happening in the form of a sidequest.
Personally I would like to see more Legacy Bosses from both the
main series (e.g Hargon, Ashtaroth, Negel (and the rest of the
DQX final bosses), Mordegon and Calasmos) and also the spinoffs
(e.g Fractos Unfettered, Dr. Snapped, Shadroth and Xiphos the
Deathbringer,) as well.

magic!

Charlie would probably be classified as a Jester (DQ3) than a
Sage.

I think Cibryll would actually do well as a Sage.

So what I'm understanding is that I should start out as a bunny
girl in tacky fishnet tights and train up enough until I can
become a lovely lady in evening gloves but no hosiery
whatsoever?

This is an outfit thing, isn't it? You don't have to start as a
Gadabout. It all depends on what skills you want to have and
then becoming a Sage once you've maxed out your current class.
