Why are compounds with many conjugate double bonds always highly
       colored?

A longer text would be needed to explain this well, but I like
       it short :):
       many conjugate double bonds→bigger
       delocalization→stabilization→lower energy gap
between HOMO and LUMO→less energy needed for the electron
transition between these orbitals→the energy needed
corresponds to the energy of a electromagnetic wave whose
wavelength is inside the interval of the visible
spectrum→one color gets absorbed and its complementary
color is the color of the substance.
