I guess just making the solution acidic will do the trick. Then
in acidic medium, water will get easily ionized and H+ will form
H2 and leave at the cathode so that O2 is liberated at the anode
instead of Cl2; then the Cu2+ that left the anode will grab the
Cl- from the solution to precipitate CuCl2.
Hope I am right. :)

you are both correct. Precipitation of copper chlorides usually
occurs when you acidify the solution, normally the lower
chloride of copper is formed(white ppt of CuCl) when you keep
the pH of the electrolyte around 7. with lower pH you could get
CuCl2. This is an interesting experiment you can try at home! ;D
