Although the exhaust speed and the ejection rate are constant,
the acceleration of a rocket is greater at a later part of its
journey.
Why?

As it wants to leave Earth's atmosphere, the gravity is pulling
it down. The velocity vector is in the opposite direction of the
gravity force, so gravity partially reduces the velocity
intensity, but at the other side, the rocket increases its speed
because of its thrust. Therefore, the change of velocity per the
unit of time is smaller in the lower parts of Earth's atmosphere
than in the higher part (gravity becomes less strong as the
distance from Earth increase).

Yes, you are right, also consider a rocket in space has a
varying mass...

The rocket will continue to accelerate in space beyond the
earth's magnetic field, One reason why this is so is that it
keeps losing fuel mass(exhaust gases)
