25 Oct 2019 - Big Storms and Heavy Meals

I thought I was going to die last night.
We had some thunderstorms move through last night. Not nearly
as bad as the ones a week ago, but by 4pm, we were already
getting rain, and the temperature had dropped from 74 to 66F
(23C to 19). Because of the rain and thunder, afternoon
practices were cancelled.
Since Kenny suddenly had an afternoon free, he decided that he
should take over the meal and make use of his spare time. I
hadn't laid out anything that couldn't wait (I'm cooking pot
roasts in the slow cookers today, instead of on the stove last
night). Kenny made a list, checked what we had and came up with
a final menu, shanghaied his brothers (leaving poor Chance
rather bemused, since this was the first time he found himself
in the path of a two-legged tsunami), and turned out a BIG meal.
He ended up cooking casseroles first, since they take a lot
longer than other stuff, so by about 5:20, the house was filling
with odors, and I was starting to get requests from guests who
wanted to stay for dinner.
"Ask Kenny," I wisely said.
Kenny had only made enough for 36 people, so he mostly said no.
Because of the birth yesterday, I had all three Henderson boys,
plus Jake and Ryan Tucker, which means we were feeding 17
people, but 13 of those people were teenage boys, so food for 36
wasn't leaving a lot of leftovers.
It was wonderful. Craig has been helping Kenny some, from time
to time, so he's been learning some of the basics, but Kenny
taught Connor how to do waffles. We'd thought about biscuits,
but we were already having a lot of food, so gravy was
considered excess, which left me in charge of setting up
toasters so people could make their choice of breads quickly.
We had salmon fillets, petite fillets, several different hash
brown casseroles, quiche and fritatas, and finished it with a
variety of muffins and a cinnamon crumb cake.
The thing is, Kenny had a great time doing it. Of course, it
did take some cleaning up afterwards (which was mostly down to
me, Jeremy, Curtis, and Kelly), but it was more than worth it.
But man! was I stuffed.

Yes. I'm an accomplished chef, and before I lived in the middle
of nowhere, I often gave elaborate dinner parties. I've never
cooked for more than 12 in my life. I can't even imagine the
logistics involved.

It can be a challenge (though I do sometimes exaggerate how much
the teenagers eat, especially after I dealt with Noah and his
5,200 calorie a day diet, while he was playing football), but
also remember, when we designed this house, it was with the
intention that I'd be hosting my family at holidays, and I had
(at that time) 6 younger siblings, a mom and step-mom, and a
bunch of cousins. Stuff that I'd belt expecting to use rarely
is now used daily, but we get by with a little help from my kids
(well, thankfully I've had several like Ryan, Noah, Bryce, Van,
and Kenny who really enjoy cooking when they have time, and some
of the newer kids are getting into it to some extent as well).

Wow that’s allot but I’m happy Kenny enjoyed himself and all his
helpers.....
Sounds like a great way to weather out the storm....

Cooking is fun. My mom made sure all of us kids knew how to
cook. Some better than others, but that is what it is. Some
take to it as a fun experience and others look at it as a chore.
The sister that lives with me now, loves to cook, as I do. My
other sister rarely cooks, she prefers to eat out, or better
said, get take out and bring it home. None of us like eating at
restaurants.
That said, as a teen I only cooked for 10 to 12 people. I also
never liked fancy food. I loved the simple down home pot meals
and still do. Just now I have to reduce that large pot to a
small sauce pan. I love homemade biscuits and yeast rolls, but
don't make them anymore. You just can't reduce that recipe
small enough for just two people. Frozen biscuits are okay,
just not as good as mom made.
Glad you have some boys who enjoy cooking. :)
