Special food options

One of the things that I’m stressing about as we consider the
future B&B for us is the amount of people who have strong food
preferences. We absolutely understand food allergies. (though we
are struggling to find solid gluten free recipes), but it’s more
those that state they can only eat organic or non-hormone raised
meat or eggs.
Is this a valid concern or do you find that people are typically
pretty flexible?

Re those types of demands, my brain says that is nice do
whatever at your house - HOWEVER, I have never had that kind of
thing. Yes, a few have said they do _____ fad diet so I look it
up to see what THIS one is and if it fits what I do, I will try
to do. Mostly I just cook, allergies and restrictions noted and
followed - and everyone gets the same breakfast (meat is always
on the side to avoid that problem).
One thing to remember - these people eat in restaurants and they
eat what is presented. GF? serve eggs. It is a lot easier these
days with everything marked GF, salt-free or low sodium,
sugar-free. When I married Himself who could not have salt (then
no fat and no sugar followed), the stuff in the groceries tasted
HORRIBLE! so I had to make everything from scratch. To this day
I do not cook with salt - it can be added (the only exception is
split pea soup - if the salted ham is not cooked IN from the
start, you could add an entire box of salt to no avail).

GF gets easier as you get to know it. Eggs, potatoes,
vegetables, oatmeal, yogurt, fruit are all GF. You can use GF
flour in baking or buy GF baked goods. Cheerios are GF.
If someone tells me they only eat organic or hormone free, I
would reply that I cannot guarantee those requirements.

Those are the people who should just stay home. If they're
strict about it, they couldn't eat at any restaurant, unless
it's a specialty organic/hormone free place they find in a
really big city! Not going to find a place they could tolerate
away from an urban area.

Shall we share diet stories? Like the woman who told me she
was gluten free while munching on a complimentary chocolate chip
cookie she’d just picked from the welcome plate?
