       Allergies

       I ask on my form for allergies. Apparently a lot of people seem
       to be allergic to vegetarians

       There's a cline from weak to strong avoidance: Food preferences,
       diets, restrictions, allergies.
       I ask on check-in, person-to-person, and sculpt breakfast around
       what I learn. Usually not too difficult as we have been dealing
       with the gluten free fad for a long time and vegetarian is easy:
       don't eat the bacon.
       Gluten free is about one-third of what it was say 4 years ago,
       basically down to people who really can't eat gluten.
       I've noticed a trend in dairy restrictions, sort of countering
       the decline in gluten free. This is a longer conversation: is
       the problem lactose or milk protein, is butter OK, is the
       problem cow so sheep cheese is OK?
       We offer a pretty standard half-dozen baked goods and I pulled
       together the ingredients section of the recipes into a sheet I
       keep at the check-in service bar so I can drill down on what is
       OK with a guest. Takes time but reduces the problems later.
       The word "allergy" is a red flag. I ask if its epi-pen level or
       not.  Other than peanuts, usually not, but if there is an
       extreme risk of cross contamination, I may say I can't serve. I
       think this has happened twice in 14 years.

       I can't handle soy allergies. Soy lecithin is in so many things.
