       This is a 3 cup one with a strong motor. Just sits on the
       counter and we never put it away. It's small and cute and a
       godsend. I gave up grating cheese. I cube it and let it rip it
       to shreds.

       When we down-sized to renting the cottage and closed the suites
       in the main house we solved the vegan problem by offering two
       types of reservations : Continental B+B with a higher rate, or
       Guest House which only includes coffee/ tea.  If someone is
       vegan we do not offer them a B+B reservation.  Problem solved!

       I must post my admiration for those of you who serve breakfast,
       as I don't. If I DID serve breakfast, I think I'd give a voucher
       of X dollars off, for odd food requirements, to a local
       breakfast restaurant! Can't believe all the trips y'all make to
       grocery stores for special foods, most of which you throw away,
       for these people, at no extra charge to them. I would ask: why?

       Because it is the breakfast that they remember. That couple I
       mentioned were young - they were Very appreciative of the extra
       I did to give them VEGAN but the thought of leaving a tip as
       appreciation most likely never crossed their minds. It is the
       people who you never expect to think of a tip who most often
       leave a nice one. For me, that special dish I made for them
       worked out nicely because the recipe made a boatload of it - so
       the next day I was able to heat it up in the oven and offer
       lunch to a friend who was here to reconcile the Foundation
       checkbooks.
       Where your place, Arks, is so fabulous that IT knocks their
       socks off, I try to do that with the breakfasts I serve that are
       NOT fancy gourmet but are good.

       For some unknown reason, I had very few special diet requests
       this season.  My vegan go-to is overnight polenta topped with
       stir fried veg.  That makes it easy and the veg would likely
       have gone into an omelette for someone else. I just don't buy
       the 'fake' food, except only Bob's one for one gluten free flour
       substitute and plant based 'butter'

       I forgot to add I keep some long life almond, rice and oat milk
       on hand for vegans or no dairy.

       I have made this recipe (vegan sheet pan pancake)

       and
       was very happy with the result! Topped with oven roasted spiced
       fruit and DF yogurt. For Vegans I've also done broccoli florets
       oven-baked with seasoning (Aldi salt-free Table Blend is my
       favorite), DF cheese, and Nutritional Yeast -- always gets
       devoured. Non-vegans get Broccoli Cheddar crustless quiche. My
       go-to side for vegetarians or vegans is potatoes, onions, veggie
       sausage and apples. Sauteed in olive oil with a dash of pumpkin
       pie spice and a generous amount of the Aldi salt-free table
       blend. I use frozen southern-style potatoes, or baby potatoes.
       Granny smith apples work best, but I'll use whatever is on hand.
       Made with regular sausage, the Harvest Sausage Apple Hash is
       well received.
