The eggs were perfect!

Guest told me quietly, not complaining, mind you, just letting
me know, that the eggs were very dry, almost inedible. Oh!
Don’t worry, he ate them anyway, but thought I should know.
Ok, this is a recipe we have been making, to rave reviews, for
10 years. I’m wondering if we set the timer wrong, or if the
oven is malfunctioning. Hubby and I both checked the eggs,
after they were on the buffet for two hours. They were
perfect! PERFECT. Exactly as they should be. Moist,
cooked through, firm, but easily cut with a fork.
It’s a crustless quiche, not meant to be scramble eggs, meant to
hold together. But honestly, I can’t see what we could do
better.
Sigh. They check out today so…..

My own thinking on things like this: IF 1000 people like it and
1 person complains, the problem is with the 1 person, not me.
So, DON'T WORRY ABOUT IT AT ALL!!
