       NIKKI'S  SPECIAL  FRIED  CHICKEN

       [center]Ingredients[/center]
       1 Frying Chicken (cut up)
       1 box Captain Krunch cereal
       1 box Jiffy Corn Muffin mix
       ¼ C flour
       2 eggs
       2 C milk
       
       [center]Preparations[/center]
       1. Cut and clean chicken.
       2. Crush ½ box box of Capt. Krunch cereal (coarsely) and place
       in large mixing bowl.
       3. Add Corn Muffin mix and flour and mix. O
       4. In a small bowl beat eggs and milk until completely mixed.
       5. Pour ¼” cooking oil in a skillet (preferably an electric
       skillet with a temperature control) O O and heat.
       6. Dip each piece of chicken in egg mixture and throughly
       saturate them.
       7. Place each chicken piece in cereal mixture and roll it,
       pressing mixture into chicken piece. (make sure each piece is
       completely covered in cereal mixture).
       8. Place chicken pieces in skillet.
       9. Cover and cook on low heat, turning frequently, until chicken
       is done and coating is a golden brown.
       
       Gravy
       
       1. Drain skillet that chicken was cooked in of the left over
       grease making sure any bits of coating remain in the skillet. O
       O O
       1. Fill skillet halfway with milk and heat over low flame.
       2. When milk begins to bubble add remaining cereal mixture and
       whisk until thoroughly mixed and texture is smooth. (Add flour
       as needed to thicken)
       3. Add salt and pepper to taste.
       
       O  Season only with salt, pepper and rosemary (to taste)
       O O   Set at 250 °.
       O O O  If you used an electric skillet, drain oil and pour
       coating “scraps” into regular skillet.
