Who's got a tried and true Ambrosia recipe?
By: BethinDC2AZ Date: April 11, 2022, 4:23 pm

I've been oddly craving it for weeks so I thought I'd bring it
to Easter dinner...which is freaking next week. How did that
happen? Anyway, I don't have a recipe and thought maybe ya'll do
rather than pull one off the internet.

I'll check with my mom.
I think there's several different versions--can you describe
what you're thinking of?
Craving--I was just thinking of asking Mom to bring either that
or a similar pistachio thing that she makes, to our Cinco de
Mayo party. (Desserts and apps aren't required to be themed).

This is essentially the MIL's recipe
HTML https://www.foodwinesunshine.com/ambrosia-salad-recipe/.
Her
version came from either Women's World or Good Housekeeping back
in the day. It's wildly popular with spouse's family.

I’m not sure if this is what you have in mind, Beth, but this is
what I have always served as Ambrosia Salad, although to call it
a salad is rather a joke. My son doesn’t care for it as it’s
quite sweet, but the rest of the family enjoys it as part of a
holiday dinner, particularly with an Easter ham. I’ve seen it
also called 5-Cup Salad, as you use equal amounts of the five
ingredients.
Canned mandarin orange segments (in juice, not syrup), well
drained
Canned pineapple chunks (in juice, not syrup), well drained
Moist flaked/shredded coconut (could use unsweetened to cut down
on sugar content but I’ve never tried it; I always use Angel
Flake brand)
White mini marshmallows
Sour cream
Gently mix equal amounts of the five ingredients together (one
cup of each makes a small batch), cover, and let it sit
refrigerated for several hours or overnight. Stir again before
serving.

That looks like the classic recipe, all right!
I've seen it with Cool Whip in place of the sour cream too. And
people have "split the difference" and used half of each!
(Roast chicken is cooling and potatoes are finishing, so I'm
sitting down for a few minutes to browse! Heavenly).

I always did the fruit + flaked coconut mixture, with "enough"
bananas and "enough" orange segments, cut in half, and "enough"
coconut, until it was the way I liked it. I never drain off the
orange juice, either; the coconut absorbs it and, to me, the
whole mixture is very tasty and refreshing.
I think my family's original recipe had miniature marshmallows
in it, but I never cared for those. The only good marshmallow
is one that's being toasted over an campfire, and that doesn't
go well in ambrosia at all.
