Great British Bake Off Banana Bread

Paul's recipe, I believe! Outstanding, only a few ingredients.
No salt, no flavorings and it works.
Total baking time is between 45-60 minutes, depending on the
amount of bananas you use.
Ingredients:
3 large or 4 smaller bananas
1 stick butter, softened or melted
3/4 C sugar plus a tablespoon, roughly
2 eggs
2 tsp baking powder
2 cups flour (I've used bread flour with excellent results as
well!)
Smash the bananas until nearly liquid. (I use a potato masher).
Add the sugar to taste. (Riper bananas get away with less
sugar, greener ones might need it all).
Add the butter and the 2 eggs. Mix lightly.
Then add about 2 cups flour and the 2 teaspoons of baking
powder. Fold into batter. I find you can eyeball it - if the
dough is sticky but not dry, you're good! If it's liquid-y, add
more flour.
Bake at 375 for 45 minutes in a standard loaf pan. You can use
parchment, or butter the pan, as both work.
At this point, remove from the oven and use an inserted knife to
determine if the bread is nearly done or still batter-ish in the
middle. I use tin foil at this point. Bake for additional 4-5
minute increments generally, test again until knife comes out
clean.
It's outstanding warm and equally so cooled. Intensely banana,
very irresistable.
